Our design is a flat griddle / grill with furrows. Due to the furrows, the flat surface area of this griddle has less contact with food than a traditional griddle, thereby diminishing the chances of the food sticking to the surface. When you apply oil to the surface, some of it drops to the furrows. When the griddle / grill is heated and the oil reaches its smoking point, the fumes it produces increase the transmission of heat to the food and give way to a smoking effect.
