Insoluble in ethanol. When heated to 109 ℃, crystal water is lost. Uses: used in the food industry as baking products, pastry loosening agent, bread and biscuit fermentation aid, buffer, meat product tissue improver, pectin curing agent, yeast food, nutritional supplement, chelating agent, etc.
