Function:
If oil temperature exceeds fixed 450°F/230°C, the high limit thermostat fryer switch contacts will open, shutting down the units to prevent the fryer and heat exchanger from overheating.
If temperature drops approximately 50°F, the reset button will return the contacts to the latched closed position and gas valve will open again.
