Description

Food grade calcium chloride (e509) for spherification and molecular gastronomy. Calcium chloride (E509) is a salt of calcium and chloride. It can be used as a chelating agent and a curing agent. Calcium chloride is one of the main ingredients in direct spherification. It is used in the curing bath to activate sodium alginate. Due to its extremely salty taste, it should not be used for reverse spherification.
